On Friday, November 2, Galleria Supermarket in Toronto, hosted a kimchi making event. Korean-Canadian celebrity chef Sang Kim showed how whole nappa cabbage kimchi has been prepared and stored the traditional Korean way for hundreds of years, while offering his insightful perspective on kimchi’s centrality in Korean cuisine.
Kimjang was registered as one of the UNESCO’s intangible cultural heritage items in recognition of the beautiful spirit of sharing among neighbours that has descended over history, promoting solidarity and providing them a sense of identity and belonging. Beyond Korean communities, kimchi is now recognized as an ideal source of natural probiotics and other healthy benefits due to the process of fermentation.
A total 1500 heads of nappa cabbage kimchi will be prepared by more than 50 people, volunteering their time and energy to make kimchi that will be donated to 15 local charities.
